  • 1.5 lb lean ground beef (93% lean)
  • 2 cups low-fat cottage cheese
  • 2 cups cooked brown rice
  • 3 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 3 cups shredded iceberg lettuce
  • 1 cup salsa
  • 1/4 cup fresh cilantro
  • 1 lime
  • 1 tbsp olive oil
  • 3 garlic cloves
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. 1Mince the garlic. Heat olive oil in a large skillet over medium-high heat until fragrant, about 30 seconds.
  2. 2Add the ground beef and break it up with a wooden spoon. Cook 6 to 8 minutes, stirring often, until no pink remains and edges start to brown.
  3. 3Stir in the minced garlic and taco seasoning; cook 1 minute more until the spices bloom and smell toasty. Taste and season with salt and pepper.
  4. 4Warm the cooked brown rice if cold, then divide it among four meal-prep bowls as the base layer.
  5. 5Spoon the hot seasoned beef evenly over the rice so the heat softens the grains slightly.
  6. 6Add a generous scoop of cottage cheese to each bowl right next to the beef; the residual heat will make it creamy without fully melting.
