Ingredients

  • 8 thick slices whole-grain bread
  • 4 large eggs
  • 1 cup liquid egg whites
  • 3/4 cup low-fat cottage cheese
  • 1/3 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 scoop protein powder (vanilla)
  • 1 tbsp butter or cooking spray
  • 1 cup fresh berries
  • 1/4 cup sugar-free maple syrup
  • 1/8 tsp pinch of salt

Instructions

  1. 1Add the whole eggs, egg whites, cottage cheese, almond milk, vanilla, cinnamon, protein powder, and salt to a blender.
  2. 2Blend on high 20–30 seconds until completely smooth and frothy with no cottage-cheese lumps.
  3. 3Pour the batter into a wide shallow dish.
  4. 4Heat a large nonstick skillet or griddle over medium heat and lightly coat with butter or spray.
  5. 5Dip each bread slice into the batter for 10–15 seconds per side, letting excess drip off.
  6. 6Place two or three slices in the hot pan and cook 3–4 minutes until the underside is deep golden and set.
  7. 7Flip carefully and cook the second side another 2–3 minutes until golden and cooked through.
  8. 8Transfer finished toast to a warm plate and repeat with remaining slices, adding a touch more fat to the pan if needed.
  9. 9Stack two slices per serving, top with fresh berries, and drizzle with sugar-free maple syrup.
  10. 10Serve immediately while the edges are still crisp and the centers stay custardy.
