Ingredients
- 8 thick slices whole-grain bread
- 4 large eggs
- 1 cup liquid egg whites
- 3/4 cup low-fat cottage cheese
- 1/3 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 scoop protein powder (vanilla)
- 1 tbsp butter or cooking spray
- 1 cup fresh berries
- 1/4 cup sugar-free maple syrup
- 1/8 tsp pinch of salt
Instructions
- 1Add the whole eggs, egg whites, cottage cheese, almond milk, vanilla, cinnamon, protein powder, and salt to a blender.
- 2Blend on high 20–30 seconds until completely smooth and frothy with no cottage-cheese lumps.
- 3Pour the batter into a wide shallow dish.
- 4Heat a large nonstick skillet or griddle over medium heat and lightly coat with butter or spray.
- 5Dip each bread slice into the batter for 10–15 seconds per side, letting excess drip off.
- 6Place two or three slices in the hot pan and cook 3–4 minutes until the underside is deep golden and set.
- 7Flip carefully and cook the second side another 2–3 minutes until golden and cooked through.
- 8Transfer finished toast to a warm plate and repeat with remaining slices, adding a touch more fat to the pan if needed.
- 9Stack two slices per serving, top with fresh berries, and drizzle with sugar-free maple syrup.
- 10Serve immediately while the edges are still crisp and the centers stay custardy.
