Instructions

  1. 1Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish so the cobbler releases cleanly after baking.
  2. 2In a large mixing bowl, combine the shredded rotisserie chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, black pepper, and salt. Stir until the mixture looks evenly coated and saucy.
  3. 3Fold half of the shredded cheddar into the chicken mixture so pockets of cheese melt through the filling. Spread the filling in an even layer in the prepared baking dish.
  4. 4In a second bowl, whisk the baking mix, milk, melted butter, and Old Bay seasoning until a thick, spoonable batter forms with no dry pockets. Do not overmix or the topping can turn tough.
