  • 1.5 lb ground turkey (93% lean)

  • 4 cups cooked basmati rice or cauliflower rice

Instructions

  1. 1In a medium bowl combine half the Greek yogurt with half the garam masala, cumin, turmeric, paprika, cayenne, salt, minced garlic, and grated ginger. Add the ground turkey and mix gently until fully coated. Let it sit 10 minutes while you prep the aromatics.
  2. 2Heat a large deep skillet or Dutch oven over medium-high heat and add the oil or ghee. When shimmering, add the diced onion and cook 5 to 6 minutes, stirring often, until soft and golden at the edges.
  3. 3Push the onion to the side and add the seasoned turkey mixture. Break it up with a wooden spoon and cook 6 to 8 minutes until no pink remains and the edges start to brown lightly.
  4. 4Sprinkle in the remaining garam masala and any leftover spices, stirring for 30 seconds until fragrant so the spices bloom in the hot fat.
  5. 5Pour in the tomato puree and chicken broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.
  6. 6Reduce heat to medium-low, stir in the coconut milk and remaining Greek yogurt, and simmer uncovered for 12 to 15 minutes. The sauce should thicken to a creamy, clingy consistency that coats the back of a spoon.
