Ingredients
- 1.25 lb ground turkey
- 1 package (about 48 wrappers) wonton wrappers
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 3 cups marinara sauce
- 3 cups packed fresh spinach
- 3 minced garlic cloves
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- 1Preheat the oven to 375°F. Lightly oil a 9x13-inch baking dish. In a large skillet over medium heat, cook the ground turkey with the minced garlic, breaking it into small crumbles until no pink remains, about 7 to 8 minutes.
- 2Stir the Italian seasoning, salt, and pepper into the cooked turkey. Add the spinach and cook just until wilted, then remove from heat and stir in marinara so the meat stays moist.
- 3In a bowl, mix the ricotta, egg, half the Parmesan, and black pepper until smooth and creamy.
- 4Spread a thin layer of marinara across the bottom of the baking dish. Arrange a single layer of wonton wrappers over the sauce, slightly overlapping the edges like lasagna noodles.
- 5Dollop and gently spread half the ricotta mixture over the wrappers. Spoon half the turkey-spinach mixture on top, then sprinkle with one-third of the mozzarella.
- 6Add another layer of wonton wrappers, the remaining ricotta, the remaining turkey mixture, more marinara, and another third of the mozzarella.
- 7Finish with a final layer of wonton wrappers, the rest of the marinara, the remaining mozzarella, and the rest of the Parmesan. Cover the dish tightly with foil.
- 8Bake covered for 25 minutes. Remove the foil and bake another 12 to 15 minutes until the cheese is bubbly and the edges are golden.
- 9Rest the lasagna for 10 minutes so the layers set and are easier to cut. Slice into six portions. Cool completely before packing into meal-prep containers; reheat covered in the microwave or oven until steaming hot.
