Ingredients

  • 2 lb ground turkey (93% lean)
  • 3/4 cup rolled oats
  • 2 large eggs
  • 1 medium yellow onion
  • 4 garlic cloves
  • 1/2 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1.5 tsp salt
  • 3/4 tsp black pepper
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar

Instructions

  1. 1Preheat the oven to 375°F and line a rimmed baking sheet with foil, then lightly oil it or use a loaf pan if preferred.
  2. 2Finely dice the onion and mince the garlic so they blend smoothly into the mixture.
  3. 3In a large bowl combine the ground turkey, oats, eggs, onion, garlic, half the ketchup, Worcestershire, Dijon, thyme, paprika, salt, and pepper.
  4. 4Mix gently with clean hands or a fork just until everything is evenly distributed; avoid overworking so the loaf stays tender.
  5. 5Shape the mixture into a free-form loaf about 9 inches long and 4 inches wide on the prepared sheet, or pack it into a standard loaf pan.
  6. 6Stir the remaining ketchup with brown sugar and apple cider vinegar to make a glossy glaze.
  7. 7Spread the glaze evenly over the top and sides of the loaf.
  8. 8Bake 50 to 55 minutes until the internal temperature reaches 165°F and the glaze is caramelized and sticky.
  9. 9Remove from the oven and let the meatloaf rest 10 minutes so slices hold together cleanly.
  10. 10Transfer to a cutting board and slice into six thick portions with a sharp knife.
  11. 11Serve hot with extra glaze spooned over if any remains on the pan.
  12. 12Cool leftovers completely before refrigerating for easy high-protein meal-prep lunches or dinners.
