Ingredients
- 2 lb ground turkey (93% lean)
- 3/4 cup rolled oats
- 2 large eggs
- 1 medium yellow onion
- 4 garlic cloves
- 1/2 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1.5 tsp salt
- 3/4 tsp black pepper
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar
Instructions
- 1Preheat the oven to 375°F and line a rimmed baking sheet with foil, then lightly oil it or use a loaf pan if preferred.
- 2Finely dice the onion and mince the garlic so they blend smoothly into the mixture.
- 3In a large bowl combine the ground turkey, oats, eggs, onion, garlic, half the ketchup, Worcestershire, Dijon, thyme, paprika, salt, and pepper.
- 4Mix gently with clean hands or a fork just until everything is evenly distributed; avoid overworking so the loaf stays tender.
- 5Shape the mixture into a free-form loaf about 9 inches long and 4 inches wide on the prepared sheet, or pack it into a standard loaf pan.
- 6Stir the remaining ketchup with brown sugar and apple cider vinegar to make a glossy glaze.
- 7Spread the glaze evenly over the top and sides of the loaf.
- 8Bake 50 to 55 minutes until the internal temperature reaches 165°F and the glaze is caramelized and sticky.
- 9Remove from the oven and let the meatloaf rest 10 minutes so slices hold together cleanly.
- 10Transfer to a cutting board and slice into six thick portions with a sharp knife.
