Ingredients

  • 1.5 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 1 medium, sliced yellow onion
  • 8 oz, sliced cremini mushrooms
  • 2 cups beef broth
  • 1 tbsp cornstarch
  • 1 tbsp ketchup
  • 1 package (24 oz) frozen mashed potatoes
  • 2 cups frozen mixed vegetables
  • 1 tbsp olive oil

Instructions

  1. 1In a large bowl, combine the ground beef, breadcrumbs, egg, onion powder, garlic powder, half the Worcestershire sauce, salt, and black pepper. Mix gently with your hands until just combined, then shape into 4 oval patties about 3/4-inch thick.
  2. 2Heat a large 12-inch skillet over medium-high heat and add the olive oil. When the oil shimmers, place the patties in the pan and sear 3 to 4 minutes per side until deeply browned with a crust; transfer to a plate.
  3. 3Reduce heat to medium and melt the butter in the same skillet. Add the sliced onion and mushrooms and cook 6 to 8 minutes, stirring occasionally, until softened and golden at the edges.
  4. 4Sprinkle the cornstarch over the vegetables and stir for 30 seconds to coat. Pour in the beef broth, remaining Worcestershire sauce, and ketchup, scraping up browned bits from the pan bottom.
  5. 5Bring the gravy to a simmer and cook 2 to 3 minutes until slightly thickened. Return the Salisbury steaks to the skillet, nestling them into the gravy. Cover and simmer on low 10 to 12 minutes until the patties reach 160°F internally and the gravy coats a spoon.
  6. 6Meanwhile, prepare the frozen mashed potatoes according to package directions, usually microwaving 6 to 8 minutes and stirring halfway until hot and fluffy. Season lightly with salt if needed.
  7. 7In a separate small saucepan or microwave-safe bowl, heat the frozen mixed vegetables with a splash of water until bright and tender-crisp, about 4 to 5 minutes; drain any excess liquid.
  8. 8To assemble the TV tray experience, divide the mashed potatoes into one compartment of each plate or divided tray, spoon the mixed vegetables into a second compartment, and place one Salisbury steak with generous mushroom-onion gravy in the main section.
  9. 9Spoon extra gravy over the steak and a little over the potatoes if desired. Serve immediately while everything is hot, recreating the classic frozen-dinner compartments with homemade flavor.
