  • 1 box (0.3 oz) sugar-free berry gelatin mix
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 1/2 cups nonfat plain Greek yogurt
  • 1/2 cup fresh berries for topping
  • 1/2 tsp lemon zest

Instructions

  1. 1Empty the sugar-free gelatin packet into a large heatproof bowl.
  2. 2Pour the boiling water over the gelatin and whisk vigorously for 2 full minutes until every crystal dissolves and the liquid is clear.
  3. 3Stir in the cold water to cool the mixture slightly, then let it sit 3 to 4 minutes until just warm to the touch, not hot.
  4. 4Add the Greek yogurt and lemon zest, then whisk hard until the mixture turns completely smooth, pale, and airy with no yogurt streaks.
  5. 5Divide evenly among four small glasses or ramekins.
  6. 6Refrigerate uncovered for 10 minutes, then cover and chill at least 2 hours or until fully set and jiggly.
  7. 7Just before serving, top each portion with a few fresh berries for color and brightness.
