Ingredients

  • 1 whole cake (about 12 oz) store-bought or homemade angel food cake
  • 1 1/2 lbs fresh strawberries
  • 1/4 cup granulated sugar
  • 1 1/2 cups heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest

Instructions

  1. 1Hull and slice the strawberries, reserving a few whole berries for garnish. Place the sliced berries in a bowl, sprinkle with the granulated sugar, and toss gently. Let macerate at room temperature for 20 to 30 minutes until juicy and glossy.
  2. 2Using a serrated knife, carefully slice the angel food cake horizontally into three even layers about 1 inch thick. Then cut each layer into rounds or neat squares that will stack neatly for individual servings.
  3. 3Chill a large mixing bowl and beaters in the freezer for 10 minutes. Pour the heavy cream into the cold bowl and whip on medium-high speed until soft peaks form.
  4. 4Add the powdered sugar, vanilla, and lemon zest. Continue whipping just until medium-stiff peaks hold their shape without becoming grainy. Taste and adjust sweetness if desired.
  5. 5Place one cake round on each serving plate as the base. Spoon a layer of macerated strawberries and their juices over the cake so the sponge soaks lightly.
  6. 6Add a generous dollop of the whipped cream, then top with a second cake round. Repeat the strawberry and cream layers.
  7. 7Finish each stack with a final cake piece, a swirl of remaining cream, extra berries, and a whole strawberry on top for height.
  8. 8Serve right away so the cake stays light and the cream holds its peaks. The airy crumb absorbs just enough berry juice without turning soggy.
