Ingredients

  • 2 cups plain nonfat Greek yogurt
  • 2 cups fresh mixed berries
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 8 leaves fresh mint leaves

Instructions

  1. 1Place half of the mixed berries in a medium bowl and mash them lightly with a fork until juicy but still chunky.
  2. 2Stir the honey, lemon juice, and vanilla extract into the mashed berries and let the mixture sit for 5 minutes so the fruit releases more juice.
  3. 3In a separate bowl whisk the Greek yogurt with the lemon zest until it looks light and smooth.
  4. 4Gently fold the sweetened berry mash into the yogurt, leaving visible streaks of fruit for a classic fool appearance rather than fully blending.
  5. 5Spoon the mixture into four serving glasses or small bowls, dividing evenly.
  6. 6Top each portion with the remaining whole berries so the color pops.
  7. 7Tear the mint leaves and scatter a few over each glass for a fresh finish.
  8. 8Chill the fools for at least 15 minutes before serving so the flavors meld, or enjoy immediately for a lighter high-protein dessert.
