Ingredients
- 1 cup graham cracker crumbs
- 3 tbsp melted unsalted butter
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 2 medium Gala or Honeycrisp apples
- 1 tbsp lemon juice
- 1/3 cup caramel sauce
- 1/2 tsp ground cinnamon
- 1 pinch of kosher salt
Instructions
- 1Stir the graham cracker crumbs with the melted butter until the mixture resembles wet sand, then divide evenly among four 8-ounce jars and press firmly into the bottoms to form crusts.
- 2In a medium bowl beat the softened cream cheese with the powdered sugar and vanilla until completely smooth and fluffy, about 2 minutes.
- 3In a separate chilled bowl whip the heavy cream to medium-stiff peaks, then gently fold the whipped cream into the cream-cheese mixture until no white streaks remain.
- 4Spoon or pipe the cheesecake filling over the crusts in each jar, smoothing the tops; refrigerate while you prepare the apples so the filling firms slightly.
- 5Core and finely dice the apples (leave the peels on for color and fiber), then toss immediately with lemon juice, cinnamon, and the pinch of salt to prevent browning.
- 6Spoon the seasoned apple dice over the chilled cheesecake layers, dividing evenly.
- 7Drizzle each jar generously with caramel sauce, letting some drip down the sides for a bakery look.
- 8Cover and chill the jars at least 1 hour or up to overnight so the flavors meld and the filling sets fully.
- 9Just before serving, add an extra tiny drizzle of caramel and a light dusting of cinnamon if desired; serve cold with small spoons.
