Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup plus 1/3 cup, divided granulated sugar
- 2 tsp baking powder
- 1 tsp plus 1 tsp, divided ground cinnamon
- 1/4 tsp fine salt
- 1/2 cup whole milk
- 1 large egg
- 3 Tbsp plus 2 Tbsp, divided unsalted butter, melted
- 1 tsp vanilla extract
- 1 cup ripe peach, finely diced
- as needed cooking spray
Instructions
- 1In a medium bowl whisk together the flour, sugar, baking powder, cinnamon, and salt until evenly combined.
- 2In a separate bowl whisk the milk, egg, melted butter, and vanilla until smooth. Pour the wet ingredients into the dry and stir just until a soft, slightly sticky dough forms.
- 3Gently fold in the finely diced peach so the fruit is distributed without crushing it into the dough.
- 4Lightly oil your hands and roll the dough into small balls about 1 inch across. Arrange them in a single layer in the air-fryer basket, leaving a little space between each; work in batches if needed.
- 5Lightly mist the tops with cooking spray. Air-fry at 350°F for 6 to 8 minutes, shaking the basket halfway, until the donut holes are puffed, golden, and cooked through in the center.
- 6While the first batch cooks, stir the remaining sugar with the remaining teaspoon of cinnamon in a shallow bowl. Melt the remaining butter in a small dish.
- 7As soon as each batch of donut holes comes out, brush them all over with melted butter while still hot, then toss in the cinnamon sugar until generously coated.
- 8Serve immediately while warm and fragrant. They stay soft inside with a crackly sweet crust outside—perfect for a fast after-school treat.
