Ingredients
- 8 slices white sandwich bread
- 6 oz (about 6-8 slices or 1 1/2 cups shr sharp cheddar cheese
- 4 tbsp unsalted butter
Instructions
- 1Take bread and cheese out of the fridge 10 minutes ahead so they come to room temperature.
- 2Lay bread on a cutting board.
- 3Divide the cheddar evenly among the 4 slices, arranging cheese to cover the bread but stay about 1/4 inch from the edges.
- 4Top each with a second slice of bread to form 4 sandwiches.
- 5Spread softened butter on the top side of each sandwich.
- 6Heat a large nonstick or cast-iron skillet over medium heat (no higher).
- 7Place two sandwiches in the skillet, buttered-side down.
- 8Spread another butter on the top side of each sandwich while the bottom cooks.
- 9Cook 3-4 minutes until the bottom is deep golden brown, pressing gently with a spatula once or twice.
- 10Flip sandwiches carefully and cook the second side 2-3 minutes until also golden and the cheese is fully melted.
- 11Remove to a plate, cut in half if desired, and serve immediately.
- 12Repeat with the remaining two sandwiches.
