Ingredients
- 1 package (2 crusts) refrigerated pie crusts
- 2 cups ripe peaches, finely diced
- 3 tbsp plus 2 tbsp for coating granulated sugar
- 1 tbsp cornstarch
- 1 tsp, divided ground cinnamon
- 1 tsp fresh lemon juice
- 1 pinch pinch of salt
- 1 large, beaten egg
- 2 tbsp melted butter
Instructions
- 1In a bowl, stir diced peaches with sugar, cornstarch, half the cinnamon, lemon juice, and salt until the fruit is evenly coated and glossy.
- 2Unroll the pie crusts on a lightly floured surface and cut out six 5-inch circles using a bowl or cutter; re-roll scraps as needed.
- 3Spoon a heaping tablespoon of the peach filling onto the center of each circle, leaving a clean border; avoid overfilling so the pies seal tightly.
- 4Brush the border of each circle with beaten egg, fold the dough over into a half-moon, and crimp firmly with a fork to seal.
- 5Cut two tiny steam vents in the top of each pie with the tip of a sharp knife.
- 6Preheat the air fryer to 350°F for 3 minutes.
- 7Brush the tops of the pies lightly with melted butter.
- 8Mix the remaining sugar with the remaining cinnamon in a shallow dish.
- 9Working in batches if needed, place pies in a single layer in the air-fryer basket without crowding.
- 10Air-fry for 8 to 10 minutes, flipping halfway, until the crust is deep golden and crisp and filling bubbles at the vents.
- 11Immediately brush the hot pies again with any remaining melted butter and roll or sprinkle them in the cinnamon sugar so it sticks.
- 12Cool 5 minutes on a rack before serving; the filling will be molten-hot straight from the fryer.
