Ingredients

  • 6 oz sugar-free dark chocolate chips (85% or keto brand)
  • 1 1/4 cups, divided heavy whipping cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 pinch pinch of salt
  • 1-2 tbsp optional powdered erythritol

Instructions

  1. 1Place the chocolate chips, butter, and a small splash of the cream in a heatproof bowl set over a saucepan of barely simmering water; keep the bowl bottom above the water.
  2. 2Stir gently until the chocolate is fully melted, glossy, and smooth, then remove from heat and stir in the vanilla and salt.
  3. 3Let the chocolate mixture cool 5 to 7 minutes until just warm to the touch so it will not melt the whipped cream later.
  4. 4In a chilled bowl whip the remaining cold heavy cream (and erythritol if using) with a hand mixer to medium-stiff peaks; stop when the cream holds shape but is still silky.
  5. 5Scoop one-third of the whipped cream into the cooled chocolate and fold vigorously to lighten the base.
  6. 6Add the remaining whipped cream in two additions, folding gently with a spatula until no white streaks remain and the mousse is airy and uniform.
  7. 7Spoon or pipe the mousse into four small cups or ramekins, smoothing the tops.
  8. 8Cover and chill at least 1 hour until set and spoonable; longer chill yields a denser French-style texture.
  9. 9Serve cold, optionally dusted with unsweetened cocoa or topped with a few fresh berries if your macros allow.
  10. 10These stay keto-friendly and elegant for 2 days covered in the refrigerator.
