Ingredients

  • 4 large ripe bananas
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 pinch pinch of salt
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. 1Peel the bananas, break them into chunks, and arrange in a single layer on a parchment-lined baking sheet.
  2. 2Freeze the banana chunks solid for at least 2 hours or overnight until rock hard.
  3. 3Add the frozen banana chunks to a high-powered food processor or blender.
  4. 4Pour in the almond milk, vanilla extract, and salt.
  5. 5Process on high, scraping down the sides every 30 seconds, until the bananas break down into a smooth soft-serve texture, about 2 to 3 minutes total.
  6. 6Add the cocoa powder and pulse just until fully incorporated and the nice cream turns uniform chocolate color.
  7. 7Scoop immediately into bowls for soft-serve style, or transfer to a freezer-safe container and freeze 20 extra minutes for firmer scoops.
  8. 8Serve right away with an optional extra dusting of cocoa if desired.
  9. 9Leftovers can be stored frozen up to a week; let sit 5 minutes at room temperature before scooping again.
