Ingredients
- 2 large ripe peaches
- 1 cup all-purpose flour
- 3 tbsp plus 1/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 1 tsp plus 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1 large egg
- 1/3 cup whole milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- as needed cooking spray
- for dusting optional powdered sugar
Instructions
- 1Dice peaches into small 1/4-inch pieces and pat very dry with paper towels so batter does not turn soggy.
- 2Whisk flour, sugar, baking powder, cinnamon, and salt in a mixing bowl.
- 3In a separate bowl beat egg with milk, melted butter, and vanilla until uniform.
- 4Pour wet mixture into dry and stir gently just until combined; fold in the dried peach pieces.
- 5Preheat air fryer to 350°F for 3 minutes. Lightly mist the basket with cooking spray.
- 6Scoop heaping tablespoons of batter into the basket, spacing them so sides do not touch; work in batches.
- 7Air-fry 6 to 8 minutes, flipping halfway, until fritters are deep golden and cooked through in the center.
- 8Stir remaining sugar with remaining cinnamon in a shallow bowl.
- 9While fritters are still hot, toss or roll them in the cinnamon sugar so the coating sticks.
- 10Rest 2 minutes on a rack, dust lightly with powdered sugar if you like, and serve warm.
