- 1 cup rolled oats
- 1 1/2 cups plain Greek yogurt
- 1 cup unsweetened almond milk
- 2 scoops vanilla protein powder
- 2 tbsp chia seeds
- 2 tbsp peanut butter
- 1 medium banana
- 1 tsp cinnamon
- 1 tbsp honey
- 1 pinch pinch of salt
Instructions
- 1In a large mixing bowl combine the rolled oats, chia seeds, cinnamon, and salt, stirring so the dry ingredients are evenly distributed.
- 2Add the plain Greek yogurt, unsweetened almond milk, vanilla protein powder, and honey. Whisk vigorously until the protein powder fully dissolves and no dry clumps remain.
- 3Mash half the banana with a fork and fold it into the oat mixture for natural sweetness and creaminess.
- 4Divide the mixture between two jars or containers, pressing down lightly so the oats are fully submerged in liquid.
- 5Slice the remaining banana and arrange the slices on top of each jar along with a swirl of peanut butter.
- 6Seal the jars and refrigerate at least 4 hours or overnight so the oats soften and the chia gels.
- 7In the morning give each jar a quick stir; if the mixture looks too thick, loosen with a splash more almond milk.
- 8Eat cold straight from the jar or warm gently in the microwave for 45 to 60 seconds, stirring halfway, until just heated through.
