Açaí Berry Protein Smoothie Bowl

Açaí Berry Protein Smoothie Bowl

From Brazil's Amazon region, açaí bowls transform the deep-purple palm berry into a thick, spoonable breakfast. This version blends frozen açaí with Greek yogurt and protein powder, then tops it with granola, berries, and chia.

Ingredients

  • 2 (100 g each) frozen unsweetened açaí packets
  • 1 cup frozen mixed berries
  • 1 large frozen banana
  • 3/4 cup plain Greek yogurt
  • 1/3 cup, plus more if needed unsweetened almond milk
  • 1 scoop (about 25 g) vanilla protein powder
  • 1 tbsp honey or maple syrup
  • 1/2 cup granola
  • 1/2 cup fresh strawberries, sliced
  • 1/4 cup fresh blueberries
  • 2 tbsp sliced almonds
  • 1 tsp chia seeds
  • 1 tbsp unsweetened coconut flakes

Instructions

  1. 1Run the frozen açaí packets under warm water for 10 seconds to loosen, then break them into chunks directly into a high-powered blender.
  2. 2Add the frozen mixed berries, frozen banana, Greek yogurt, almond milk, protein powder, and honey.
  3. 3Blend on high, stopping to scrape down the sides every 20 seconds, until the mixture is extremely thick and spoonable like soft-serve—about 45–60 seconds total. Add a splash more almond milk only if the blades stall.
  4. 4Taste and adjust sweetness if needed; the texture should hold peaks on a spoon.
  5. 5Divide the thick base between two shallow bowls, using the back of a spoon to create a smooth surface with a slight well in the center.
  6. 6Arrange the granola in a neat stripe down the middle of each bowl.
  7. 7Top one side with sliced strawberries and blueberries and the other with sliced almonds, chia seeds, and coconut flakes for color contrast.
  8. 8Serve immediately with a spoon; the bowl should stay thick and cold for 5–10 minutes before melting.
