Ingredients
- 2 cups full-fat cottage cheese
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup fresh blueberries
- 2 Tbsp honey
- 1/2 tsp vanilla extract
- 1/2 tsp lemon zest
- 1/2 cup granola (any crunchy variety)
- 2 Tbsp sliced almonds
- 1 tsp chia seeds
- 1 pinch pinch of flaky sea salt
Instructions
- 1Spoon cottage cheese into each of two serving bowls and smooth the tops slightly with the back of a spoon.
- 2In a small bowl, stir together the honey, vanilla, and lemon zest until the honey loosens and smells fragrant.
- 3Drizzle half the honey mixture over each bowl of cottage cheese so it pools in the ridges.
- 4Arrange sliced strawberries and blueberries evenly over both bowls, pressing a few berries lightly into the cheese so they stay put.
- 5Sprinkle granola over each bowl for crunch, followed by sliced almonds and a light dusting of chia seeds.
- 6Finish each bowl with a tiny pinch of flaky sea salt to balance the sweetness and make the berries pop.
- 7Serve immediately for maximum crunch, or cover and refrigerate up to 2 hours if prepping ahead—add granola just before eating so it stays crisp.
- 8Optional: for a creamier texture, blend half the cottage cheese with a splash of milk for 20 seconds and swirl it back into the bowls before topping.
