Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups unsweetened almond milk
  • 1 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 3/4 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries, halved if large
  • 1 teaspoon lemon zest
  • 1/4 cup sliced almonds
  • 1 pinch pinch of fine sea salt

Instructions

  1. 1In a large mixing bowl, whisk together the rolled oats, almond milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, lemon zest, and sea salt until everything is evenly combined and no dry oat pockets remain.
  2. 2Gently fold in half of the diced strawberries, half of the blueberries, half of the raspberries, and half of the blackberries so the fruit is distributed throughout the oat mixture without crushing the berries.
  3. 3Divide the oat mixture evenly among 4 jars or airtight containers, filling each three-quarters full to leave room for toppings.
  4. 4Cover the jars tightly and refrigerate for at least 6 hours or overnight so the oats soften and the chia seeds thicken the mixture into a creamy, spoonable texture.
  5. 5In the morning, give each jar a quick stir to loosen the oats; if the mixture seems too thick, splash in 1 to almond milk and stir until creamy again.
  6. 6Top each serving with the remaining fresh strawberries, blueberries, raspberries, and blackberries, arranging them so the colors look bright and inviting.
  7. 7Sprinkle sliced almonds over each jar for crunch, then drizzle with an extra teaspoon of maple syrup if you prefer a sweeter finish.
  8. 8Serve chilled straight from the jar with a spoon; the oats keep well refrigerated up to 3 days, so you can grab one for busy weekday mornings.
