  • 2 cups old-fashioned rolled oats
  • 2 cups unsweetened almond milk
  • 1 cup plain Greek yogurt
  • 2 tbsp chia seeds
  • 3 tbsp honey
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 medium crisp apples
  • 1 1/2 cups red seedless grapes
  • 1 tbsp fresh lemon juice
  • 1/4 cup toasted pumpkin seeds
  • 1 pinch of fine sea salt

Instructions

  1. 1Wash the apples and grapes thoroughly under cool running water, then pat dry with a clean towel. Core the apples and dice them into small bite-size pieces, leaving the skin on for color and fiber.
  2. 2Halve the grapes if they are large so they nestle easily into the oats; leave smaller ones whole for bursts of juice. Toss the diced apple with the lemon juice in a small bowl to keep the fruit bright and prevent browning.
  3. 3In a large mixing bowl whisk together the rolled oats, almond milk, Greek yogurt, chia seeds, honey, cinnamon, vanilla, and sea salt until everything is evenly combined and no dry pockets of oats remain.
  4. 4Fold half of the dressed apple pieces and half of the grapes gently into the oat mixture so the fruit is distributed throughout without crushing.
  5. 5Divide the mixture evenly among four jars or lidded containers, packing it down lightly with the back of a spoon. Top each portion with the remaining apple and grapes.
  6. 6Seal the jars and refrigerate for at least 6 hours or overnight so the oats soften and the chia gels into a creamy texture.
  7. 7In the morning give each jar a quick stir. If the oats seem too thick, loosen with a splash of extra almond milk until spoonable.
  8. 8Sprinkle toasted pumpkin seeds over the top just before eating for crunch. Serve cold straight from the jar or let sit at room temperature for 10 minutes if you prefer it less chilled.
