Ingredients
- 2.5 lb ripe Roma tomatoes
- 1 large yellow onion
- 6 garlic cloves
- 3 Tbsp extra-virgin olive oil
- 1.25 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 3 cups vegetable or chicken broth
- 1 cup packed fresh basil leaves
- 1/2 cup heavy cream or half-and-half
- 1 tsp balsamic vinegar
- 8 slices baguette or sourdough
- 1 cup shredded mozzarella or sharp cheddar
- 1/4 tsp garlic powder
Instructions
- 1Preheat the oven to 425°F. Core and quarter the tomatoes, roughly chop the onion, and toss both on a rimmed sheet pan with the whole garlic cloves, olive oil, salt, and the black pepper.
- 2Roast 35–40 minutes, stirring once halfway, until the tomatoes are collapsed, caramelized at the edges, and the garlic is soft and golden.
- 3Transfer the entire contents of the pan, including juices, to a blender along with the fresh basil and broth; blend on high until completely smooth, about 45 seconds.
- 4Pour the puree into a medium Dutch oven or saucepan, add the remaining broth, and bring to a gentle simmer over medium heat.
- 5Stir in the cream and balsamic vinegar, taste, and adjust seasoning with the remaining salt if needed; keep warm on low while you make the toast.
- 6Brush one side of each bread slice with the remaining olive oil and sprinkle lightly with garlic powder.
- 7Top each slice with a generous handful of shredded cheese and broil on a sheet pan 2–3 minutes until the cheese is melted, bubbly, and spotted golden brown.
- 8Ladle the hot soup into bowls, float two cheesy toast dippers on the side or half-submerged, and finish with a few torn basil leaves and a crack of black pepper.
