- 1.5 lb peeled cubed butternut squash
- 2 medium peeled cored chopped Honeycrisp apples
- 1 medium chopped yellow onion
- 2 minced garlic cloves
- 2 Tbsp olive oil
- 4 cups vegetable broth
- 3 fresh thyme sprigs
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp ground cinnamon
- 1/3 cup plain Greek yogurt
- 3 Tbsp toasted pumpkin seeds
- 2 Tbsp snipped fresh chives
Instructions
- 1Preheat the oven to 425°F and line a rimmed baking sheet with parchment.
- 2Toss the cubed squash, chopped apples, and onion with olive oil, salt, and pepper directly on the sheet.
- 3Spread into a single layer and roast 25 to 30 minutes, stirring once, until the squash is tender and lightly caramelized at the edges and the apples smell sweet.
- 4Transfer the roasted mixture to a large pot and add the minced garlic, vegetable broth, thyme sprigs, and cinnamon.
- 5Bring to a gentle simmer over medium heat and cook 8 to 10 minutes so the flavors blend and the garlic softens.
- 6Remove and discard the thyme sprigs.
- 7Carefully puree the soup with an immersion blender until completely smooth and silky; alternatively blend in batches in a countertop blender, venting the lid.
- 8Taste and adjust seasoning; the soup should taste naturally sweet from the apples and squash without heavy cream.
- 9Ladle into small heatproof glasses, espresso cups, or shot glasses for shooters, or into mugs for a fuller lunch portion.
- 10Swirl a small spoonful of Greek yogurt on top of each serving.
- 11Finish with a sprinkle of toasted pumpkin seeds and snipped chives for crunch and color.
