Ingredients

  • 1 1/2 lb sweet potatoes
  • 2 medium tart apples (Granny Smith or Honeycrisp)
  • 1 medium yellow onion
  • 1 large carrot
  • 1 celery stalk
  • 3 garlic cloves
  • 1-inch piece fresh ginger
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1 tbsp apple cider vinegar
  • 1/3 cup plain Greek yogurt
  • 8 fresh sage leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup pepitas

Instructions

  1. 1Peel the sweet potatoes and cut them into 1-inch chunks. Core the apples and chop them into similar-size pieces; no need to peel.
  2. 2Dice the onion, carrot, and celery. Mince the garlic and grate the ginger.
  3. 3Warm the olive oil in a heavy 5-quart pot over medium heat. Add the onion, carrot, and celery and cook 6 to 7 minutes until softened and lightly golden at the edges.
  4. 4Stir in the garlic, ginger, cinnamon, cumin, and smoked paprika; cook 1 minute until the spices bloom and smell toasty.
  5. 5Add the sweet potato and apple chunks, pour in the vegetable broth, and bring to a lively simmer.
  6. 6Reduce heat to medium-low, cover partially, and cook 18 to 20 minutes until the sweet potatoes are completely tender when pierced with a fork.
  7. 7Remove from heat. Use an immersion blender to puree the soup until silky smooth, or carefully transfer in batches to a countertop blender.
  8. 8Stir in the apple cider vinegar, salt, and pepper. Taste and adjust; the soup should taste bright and lightly sweet.
  9. 9Ladle into bowls. Swirl a spoonful of Greek yogurt on each serving, scatter torn sage leaves and pepitas over the top, and finish with a crack of black pepper.
  10. 10Serve hot; leftovers reheat beautifully for meal-prep lunches throughout the week.
