Ingredients

  • 2 large (about 1.5 lb total) boneless skinless chicken breasts
  • 1 lb broccoli florets
  • 1.5 cups marinara sauce
  • 1.5 cups shredded low-moisture mozzarella
  • 1/2 cup grated Parmesan
  • 3/4 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 3 Tbsp olive oil
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 1.25 tsp kosher salt
  • 1/2 tsp black pepper
  • for serving fresh basil leaves

Instructions

  1. 1Preheat oven to 425°F. Line a large rimmed sheet pan with parchment. Slice each chicken breast horizontally into 2 thinner cutlets and pound gently to even 1/2-inch thickness. Season both sides with salt and pepper.
  2. 2Set up a breading station: flour on one plate; beaten egg on a second; panko mixed with Parmesan, garlic powder, Italian seasoning, and salt on a third. Dredge each cutlet in flour, dip in egg, then press firmly into panko mixture so crumbs adhere.
  3. 3Toss broccoli florets with olive oil, remaining salt, and pepper. Arrange breaded cutlets on one half of the sheet pan and broccoli on the other half in a single layer. Drizzle or spray cutlets lightly with remaining olive oil.
  4. 4Bake 14–16 minutes until chicken is nearly cooked (about 155°F) and breadcrumbs are light golden, and broccoli is browned at the edges. Remove pan from oven.
  5. 5Spoon marinara evenly over each cutlet (about 1/3 cup each). Top with mozzarella and remaining Parmesan. Return to oven 6–8 minutes until cheese is melted and bubbling and chicken reaches 165°F. For extra browning, broil 1 minute watching closely.
  6. 6Rest 3 minutes. Scatter fresh basil over the chicken. Serve cutlets with the roasted broccoli and extra warm marinara on the side if desired.
