  • 1.5 lb boneless skinless chicken breasts
  • 2 cups seedless red grapes
  • 2 cups cherry tomatoes
  • 3 tbsp extra-virgin olive oil
  • 6 fresh thyme sprigs
  • 4 garlic cloves
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh basil leaves

Instructions

  1. 1Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. Let them sit at room temperature for 10 minutes while you prep the produce.
  2. 2Halve the grapes if they are large and leave the cherry tomatoes whole. Smash the garlic cloves lightly with the side of a knife and leave the peels on for roasting.
  3. 3Heat a large 12-inch oven-safe skillet over medium-high heat and add the olive oil until it shimmers. Place the chicken breasts in the pan and sear without moving for 4 to 5 minutes until a deep golden crust forms.
  4. 4Flip the chicken and nestle the grapes, tomatoes, smashed garlic, and thyme sprigs the pieces. Transfer the skillet to a preheated 425°F oven.
  5. 5Roast for 12 to 15 minutes until the chicken reaches 165°F internally and the grapes and tomatoes are blistered and releasing juices.
  6. 6Remove the skillet carefully using oven mitts and transfer the chicken to a cutting board to rest for 5 minutes.
  7. 7Place the skillet back on the stovetop over medium heat, discard the thyme stems, and stir in the balsamic vinegar to deglaze, scraping up any browned bits for 1 minute until slightly thickened.
  8. 8Slice the rested chicken against the grain. Spoon the roasted grapes, tomatoes, and pan juices over the top.
  9. 9Tear the fresh basil leaves over everything just before serving for a bright finish. Serve immediately while the fruit is warm and juicy.
