  • 1.25 lb boneless skinless chicken breasts
  • 1.5 cups orzo pasta
  • 1/2 cup sun-dried tomatoes in oil
  • 4 cups fresh spinach
  • 4 garlic cloves
  • 3 cups chicken broth

  • 3/4 cup grated Parmesan cheese

Instructions

  1. 1Pat the chicken breasts dry and season both sides generously with salt, black pepper, and half the Italian seasoning. Heat olive oil in a large deep skillet over medium-high heat.
  2. 2Sear the chicken 4 to 5 minutes per side until golden brown and nearly cooked through. Transfer to a plate; it will finish in the sauce later.
  3. 3Lower heat to medium. Add minced garlic and drained chopped sun-dried tomatoes to the same pan and cook 60 seconds until fragrant.
