
Muscle-Building Steak Bites with Cauli Mash

Ingredients
- 1.5 lb sirloin steak
- 1 large head (about 6 cups) cauliflower florets
- 3 tbsp butter
- 4 minced garlic cloves
- 1/4 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1.5 tsp salt
- 3/4 tsp black pepper
- 2 tbsp chopped fresh chives
- 2 tbsp beef broth
Instructions
- 1Cut the sirloin into 1-inch cubes and pat them very dry. Season the cubes evenly with smoked paprika, half the salt, and half the black pepper.
- 2Steam or boil the cauliflower florets until completely tender, about 10 to 12 minutes. Drain thoroughly and let steam off for a minute so the mash stays thick.
- 3Transfer the hot cauliflower to a food processor or use a potato masher. Add half the butter, the heavy cream, Parmesan, remaining salt and pepper, and half the minced garlic. Blend or mash until smooth and creamy. Keep warm.
- 4Heat a large cast-iron or heavy skillet over high heat until very hot. Add the olive oil and swirl to coat.
- 5Add the steak bites in a single layer without crowding; work in two batches if needed. Sear undisturbed for 90 seconds until a deep brown crust forms.
- 6Flip the bites and sear another 60 to 90 seconds for medium-rare, or longer if you prefer more done. In the last 30 seconds of the final batch, add the remaining butter and garlic and toss to coat.
- 7Splash in the beef broth and scrape up the browned bits to create a quick pan sauce. Remove from heat once the sauce glazes the steak.
- 8Spoon the warm cauli mash into bowls or plates and top generously with the steak bites and pan juices. Finish with chopped chives and an extra grind of black pepper.
