
Muscle-Building Hot Honey Beef Tortilla Kebabs

Ingredients
- 1.5 lb flank steak
- 8 small flour tortillas
- 1/3 cup hot honey
- 3 tbsp lime juice
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1.5 tsp kosher salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 large red onion
- 2 medium bell peppers
- 1/4 cup chopped fresh cilantro
- 1/2 cup crumbled cotija cheese
- 8 wooden or metal skewers
Instructions
- 1Pat the flank steak dry and slice it against the grain into thin strips about 1 inch wide. Place the strips in a large bowl.
- 2Whisk hot honey, lime juice, chili powder, smoked paprika, garlic powder, salt, pepper, and olive oil until glossy. Pour most of the mixture over the beef, reserving a few spoonfuls for finishing. Toss until every strip is coated and marinate 15 minutes at room temperature.
- 3If using wooden skewers, soak them in water while the beef marinates so they do not scorch. Cut the red onion and bell peppers into chunky 1-inch pieces that will hold on a skewer.
- 4Thread beef strips in accordion folds onto skewers, alternating with onion and pepper pieces so each kebab is packed with protein and vegetables. Leave a little space between pieces for even heat.
- 5Preheat a grill or heavy grill pan to medium-high, about 425°F. Oil the grates lightly. Lay the kebabs on the hot surface and cook 3 to 4 minutes per side, turning once, until the beef is browned with charred edges and just cooked through.
- 6In the last minute, brush the reserved hot honey mixture over the kebabs so it caramelizes into a sticky glaze. Watch closely so the honey does not burn.
- 7Warm the flour tortillas on the cooler edge of the grill or in a dry skillet until soft and lightly toasted, about 30 seconds per side.
- 8Slide the hot kebabs off the skewers onto the warm tortillas, or serve the kebabs nested inside the tortillas taco-style. Scatter cilantro and cotija over the top.
- 9Rest 2 minutes so juices settle, then serve immediately while the glaze is still glossy and the beef is juicy.
