Ingredients
- 2 cups plain nonfat Greek yogurt
- 8 oz light cream cheese
- 3 tbsp honey
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 cup graham cracker crumbs
- 2 tbsp melted coconut oil
- 1 cup fresh blueberries
- 1 pinch pinch of salt
Instructions
- 1Line four small ramekins or clear dessert cups with a thin layer of parchment circles if you want easy lift-out later.
- 2In a medium mixing bowl, beat the softened light cream cheese with a hand mixer on medium speed until completely smooth and free of lumps, about 1 minute.
- 3Add the Greek yogurt, honey, vanilla extract, lemon juice, lemon zest, and salt. Continue beating on low then medium until the filling is silky, thick, and evenly combined, scraping the bowl once.
- 4Taste the filling and adjust sweetness with a tiny extra drizzle of honey only if needed; it should taste bright and lightly sweet.
- 5In a small bowl stir the graham cracker crumbs with the melted coconut oil until the crumbs look like wet sand and hold together when pressed.
- 6Divide the crumb mixture evenly among the four cups and press firmly into an even base layer using the back of a spoon.
- 7Spoon the yogurt cheesecake filling over each crust, smoothing the tops with an offset spatula or the back of a spoon so the surface is level.
- 8Cover each cup loosely with plastic wrap and refrigerate for at least 2 hours, or overnight, until the filling is firmly set and chilled through.
- 9Just before serving, top each cup with a generous spoonful of fresh blueberries.
