Instructions

  1. 1Preheat the oven to 350°F. Lightly butter a 10-inch cast-iron skillet so the cake releases cleanly after baking.
  2. 2Add the fresh corn kernels and milk to a blender and puree until mostly smooth with a few small bits remaining for texture. Pour the corn milk into a large mixing bowl.
  3. 3Whisk the eggs, honey, granulated sugar, melted butter, and vanilla into the corn milk until the mixture looks uniform and slightly frothy.
  4. 4In a separate bowl stir together the flour, cornmeal, baking powder, and salt. Tip the dry ingredients into the wet mixture and fold gently just until no dry streaks remain; a few small lumps are fine.
  5. 5Pour the batter into the prepared skillet and smooth the top. Sprinkle the surface evenly with cinnamon sugar for a crackly finish.
