
Apple Cider Poached Pear Compote

Ingredients
- 4 firm ripe pears, peeled cored and quartered
- 1 large crisp apple, peeled cored and diced
- 2 cups apple cider
- 1/4 cup honey
- 1 cinnamon stick
- 1 whole star anise
- 3 thin coins fresh ginger, sliced
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 pinch of salt
- 1/4 cup toasted sliced almonds for serving
- optional Greek yogurt or vanilla ice cream
Instructions
- 1In a medium saucepan combine the apple cider, honey, cinnamon stick, star anise, ginger slices, lemon juice, and salt.
- 2Bring the liquid to a gentle simmer over medium heat, stirring once or twice until the honey dissolves completely.
- 3Add the pear quarters and diced apple to the simmering cider so they are mostly submerged.
- 4Reduce heat to low, cover partially, and poach for 18 to 22 minutes, turning the fruit once halfway, until the pears are tender when pierced with a knife but still hold their shape.
- 5Using a slotted spoon carefully transfer the poached pears and apple pieces to a serving bowl.
- 6Raise the heat to medium-high and boil the remaining poaching liquid uncovered for 8 to 10 minutes until it reduces to a glossy syrup that coats the back of a spoon.
- 7Remove and discard the cinnamon stick, star anise, and ginger.
- 8Stir the vanilla extract into the reduced syrup, then pour it over the warm fruit in the bowl.
- 9Let the compote cool slightly so the flavors meld, or chill completely if making ahead.
- 10Just before serving warm gently if desired, spoon into small bowls or over yogurt or ice cream, and finish with a scatter of toasted sliced almonds.
- 11Present in a large shared bowl with a ladle so guests can help themselves at the table.
