Instructions

  1. 1Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides so you can lift the bars out cleanly later.
  2. 2In a medium bowl, stir graham cracker crumbs, granulated sugar, melted butter, and salt until the mixture looks like wet sand and holds together when pressed. Firmly press into an even layer in the prepared pan using the bottom of a measuring cup. Chill the crust in the freezer for 15 minutes while you make the filling.
  3. 3In a large bowl, beat the softened cream cheese with an electric mixer on medium speed for 1 to 2 minutes until completely smooth and lump-free. Add powdered sugar, lemon juice, lemon zest, and vanilla; beat another minute until fluffy and combined, scraping the bowl once.
