Ingredients
- 4 ripe nectarines
- 3 tbsp honey
- 1 cup crushed graham crackers
- 3 tbsp melted unsalted butter
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 3/4 cup heavy cream
- 1 tsp lemon zest
- 1 pinch kosher salt
- for garnish fresh mint leaves
Instructions
- 1Pit and slice the nectarines into wedges. Toss them with honey in a bowl and let stand 10 minutes so juices begin to release.
- 2Heat a dry skillet or grill pan over medium-high. Arrange the nectarine wedges in a single layer and cook until lightly charred and caramelized on both sides, 2 to 3 minutes per side. Transfer to a plate to cool completely.
- 3Stir the crushed graham crackers with the melted butter and salt until the crumbs look like wet sand. Divide the mixture among four 8-ounce jars and press firmly into an even base layer.
- 4In a mixing bowl beat the softened cream cheese, powdered sugar, vanilla, and lemon zest until completely smooth and fluffy, about 2 minutes.
- 5In a separate cold bowl whip the heavy cream to medium-stiff peaks. Gently fold the whipped cream into the cream-cheese mixture in two additions until light and no streaks remain.
- 6Spoon or pipe the cheesecake filling over the crusts, filling each jar two-thirds full. Smooth the tops with the back of a spoon.
- 7Chop half the cooled roasted nectarines and fold any remaining honey juices into them. Spoon the fruit over the cheesecake layer, then top with the remaining whole wedges.
- 8Cover the jars and refrigerate at least 2 hours or overnight so the filling sets and the flavors meld.
- 9Just before serving, garnish with a fresh mint leaf. The jars travel well for picnics or back-to-school dessert packs.
