- 2 tbsp chili crisp
- 2 tbsp honey
- 1 tsp vanilla extract
- 3 cups cornflakes cereal
- 1/2 cup roasted salted peanuts, chopped
- 1/2 tsp flaky sea salt
- 1 tbsp extra chili crisp for drizzle
Instructions
- 1Line a large baking sheet with parchment paper and set aside. In a medium microwave-safe bowl combine the chocolate chips, peanut butter, and butter.
- 2Microwave in 30-second bursts, stirring between each, until the mixture is completely smooth and glossy, about 90 seconds total. Stir in the chili crisp, honey, and vanilla until evenly distributed; the oil from the chili crisp will give a shiny finish.
- 3Place the cornflakes and chopped peanuts in a large mixing bowl. Pour the warm chocolate mixture over the top and fold gently with a spatula until every flake is coated and glossy without crushing them into dust.
- 4Using a cookie scoop or two spoons, drop heaping mounds onto the prepared sheet, spacing them slightly apart. Working quickly, drizzle each cluster with a little extra chili crisp and finish with flaky sea salt.
