Ingredients

  • 2 cups plain Greek yogurt full-fat or 2%
  • 2 scoops (about 60 g) vanilla or unflavored whey or casein protein powder
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup mixed berries fresh or frozen
  • 1/3 cup chopped pistachios or almonds
  • 1/4 cup dark chocolate chips
  • 1 pinch of sea salt

Instructions

  1. 1Line a rimmed baking sheet or quarter sheet pan with parchment paper and set aside.
  2. 2In a medium bowl whisk the Greek yogurt, protein powder, honey, and vanilla until completely smooth and thick with no dry protein lumps.
  3. 3Spread the yogurt mixture onto the prepared pan in an even rectangle roughly 1/4-inch thick, using a spatula to square the edges.
  4. 4Scatter the berries evenly over the surface, gently pressing larger pieces so they adhere.
  5. 5Sprinkle the chopped nuts and dark chocolate chips across the top, then finish with a light pinch of sea salt.
  6. 6Place the pan flat in the freezer and freeze for at least 2–3 hours, or until the bark is solid and snaps cleanly when broken.
  7. 7Once fully frozen, lift the parchment and break or cut the bark into 6 generous pieces.
  8. 8Store pieces in a freezer bag or airtight container with parchment between layers. Let sit 1–2 minutes at room temperature before eating for the best texture.
