Ingredients

  • 2 cups plain nonfat Greek yogurt
  • 1 scoop (about 30 g) vanilla protein powder
  • 2 tablespoons honey
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup chopped pistachios or almonds
  • 2 tablespoons mini dark chocolate chips

Instructions

  1. 1Line a rimmed baking sheet with parchment paper and set aside.
  2. 2In a medium bowl, stir the Greek yogurt, vanilla protein powder, and honey together until completely smooth and thick with no dry powder pockets.
  3. 3Spread the yogurt mixture onto the prepared sheet in an even rectangle roughly 1/4-inch thick.
  4. 4Scatter the fresh mixed berries evenly over the surface, gently pressing them in so they stick.
  5. 5Sprinkle the chopped pistachios and mini dark chocolate chips across the top.
  6. 6Place the sheet flat in the freezer and freeze for at least 2 hours or until the bark is solid and snaps cleanly.
  7. 7Lift the parchment out, then break or cut the bark into roughly 12 rustic pieces.
  8. 8Store the pieces in an airtight container in the freezer; they stay firm and ready to grab for high-protein dessert snacks all week.
