Tiramisu means “pick me up” in Italian, a nod to the espresso that defines the classic dessert. These meal-prep cups keep the coffee-soaked ladyfingers and cocoa finish, folding Greek yogurt, cottage cheese, and vanilla protein into a smooth cream.

Ingredients
- 1/2 cup strong brewed espresso, cooled
- 8 ladyfinger cookies
- 1 1/2 cups nonfat Greek yogurt
- 1 cup cottage cheese
- 2 scoops vanilla protein powder
- 3 tbsp maple syrup
- 2 tbsp unsweetened cocoa powder
- 2 tbsp dark chocolate shavings
Instructions
- 1Brew the espresso ahead and let it cool completely so it does not melt the cream layers later.
- 2In a blender, combine the Greek yogurt, cottage cheese, protein powder, and maple syrup; blend until ultra-smooth and thick like mascarpone.
- 3Break each ladyfinger in half so they fit neatly into four small jars or meal-prep cups.
- 4Quickly dip half the ladyfinger pieces into the cooled espresso for 1 to 2 seconds each—just enough to soften without turning soggy—and arrange them as the base layer in each cup.
- 5Spoon half of the protein cream mixture over the soaked cookies and smooth the tops with the back of a spoon.
- 6Repeat with a second layer of espresso-dipped ladyfingers followed by the remaining cream.
- 7Dust the tops generously with cocoa powder through a fine mesh sieve for an even classic finish.
- 8Sprinkle dark chocolate shavings over each cup for texture and visual appeal.
- 9Cover and refrigerate at least 2 hours or overnight so the flavors meld and the texture firms into spoonable tiramisu; keep chilled up to 4 days for meal prep.
