Ingredients

  • 2 large Honeycrisp or Gala apples
  • 1/2 cup extra-virgin olive oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup plain whole-milk Greek yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 2 tbsp powdered sugar
  • 2 tbsp honey for drizzling

Instructions

  1. 1Preheat the oven to 350°F. Grease a 9-inch springform or round cake pan and line the bottom with parchment.
  2. 2Peel, core, and cut the apples into thin half-moons; set aside half the slices for the top and dice the rest.
  3. 3In a large bowl whisk the olive oil and sugar until combined, then beat in the eggs one at a time until the mixture looks emulsified and pale.
  4. 4Whisk in the yogurt and vanilla until smooth and creamy.
  5. 5In a separate bowl combine the flour, baking powder, cinnamon, and salt. Fold the dry ingredients into the wet mixture just until no flour streaks remain; the batter will be thick and silky.
  6. 6Fold in the diced apples, then scrape the batter into the prepared pan and smooth the top. Arrange the reserved apple slices in a decorative circular pattern over the surface, pressing them lightly.
  7. 7Bake on the center rack for 40 to 48 minutes until the cake is deep golden, springs back when gently pressed, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. 8Cool in the pan 15 minutes, then release the springform or invert carefully onto a rack. Dust with powdered sugar and finish with a light drizzle of honey just before slicing.
  9. 9Serve slightly warm or at room temperature; the olive oil keeps it moist for days, perfect for lunchboxes.
