  • 6 ripe plums
  • 1/4 cup hot honey
  • 1 tbsp neutral oil for grill
  • 1 pint vanilla ice cream
  • 1/2 cup all-purpose flour
  • 1/4 cup fine cornmeal
  • 3 tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 3 tbsp cold unsalted butter
  • 1/4 cup toasted sliced almonds
  • pinch flaky sea salt

Instructions

  1. 1Preheat a gas or charcoal grill to medium-high heat, about 400°F, and oil the grates well. Halve and pit the plums.
  2. 2In a small bowl stir the hot honey until fluid. Brush the cut sides of the plums lightly with oil so they do not stick.
  3. 3Grill the plums cut-side down 3 to 4 minutes until deep grill marks appear and the fruit softens but still holds shape. Flip briefly for 1 minute, then transfer to a platter and immediately brush with half the hot honey so it soaks in.
  4. 4While the grill heats, make the crumble: in a bowl combine flour, cornmeal, brown sugar, cinnamon, and salt. Cut in the cold butter with fingertips until clumps form. Spread on a small sheet pan.
  5. 5Bake the crumble at 350°F (or in a grill-safe pan with the lid closed) 12 to 14 minutes, stirring once, until golden and crisp. Cool slightly, then toss with the toasted almonds.
  6. 6Scoop vanilla ice cream into four bowls or glasses. Top each with three warm grilled plum halves, letting juices drip over the ice cream.
  7. 7Drizzle the remaining hot honey over everything, then shower with the warm cornmeal-almond crumble and a tiny pinch of flaky salt.
