Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 2 tsp ube extract
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 2 tbsp ube powder or purple yam powder
- 1/2 tsp baking soda
- 1 tsp cornstarch
- 1/2 tsp fine sea salt
- 1 cup white chocolate chips
- 2 tbsp purple sanding sugar for rolling (optional)
Instructions
- 1Preheat the oven to 350°F and line two baking sheets with parchment paper; set aside.
- 2In a large bowl, cream the softened butter, brown sugar, and granulated sugar together with a hand mixer on medium speed for 2–3 minutes until light, fluffy, and pale.
- 3Beat in the egg, ube extract, and vanilla extract until fully incorporated and the dough turns a vibrant purple; scrape down the sides of the bowl.
- 4In a medium bowl, whisk together the flour, ube powder, baking soda, cornstarch, and salt until evenly combined and no purple clumps remain.
- 5Add the dry ingredients to the wet mixture in two additions, mixing on low speed just until a soft dough forms and no dry flour streaks are visible—do not overmix.
- 6Fold in the white chocolate chips with a spatula until evenly distributed throughout the purple dough.
- 7Scoop 2-tablespoon portions of dough, roll into balls, and if desired roll lightly in purple sanding sugar; place 3 inches apart on the prepared sheets.
- 8Bake one sheet at a time for 10–12 minutes until the edges are set and just starting to turn golden while the centers still look slightly underdone and puffy.
- 9Remove from the oven and immediately tap the baking sheet once firmly on the counter to deflate the cookies slightly for that signature chewy wrinkle; let cool on the sheet for 5 minutes.
- 10Transfer cookies to a wire rack to cool completely for another 15 minutes; the centers will firm up into a soft, chewy texture with melty white chocolate pockets.
