Ingredients
- 3/4 cup unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 2 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp kosher salt
- 2 medium ripe nectarines
- 1/2 cup white chocolate chips
- 1 tbsp for sprinkling turbinado sugar
Instructions
- 1Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving overhang on two sides.
- 2In a light-colored saucepan melt the butter over medium heat and continue cooking, swirling frequently, until the foam subsides and brown bits form on the bottom and the aroma turns nutty, 5 to 7 minutes. Pour into a large mixing bowl and cool 5 minutes.
- 3Whisk both sugars into the warm brown butter until smooth and glossy. Add the whole egg, egg yolk, and vanilla; whisk vigorously for a full minute until the mixture lightens slightly.
- 4In a separate bowl stir together the flour, baking powder, and salt. Fold the dry ingredients into the butter mixture just until no flour streaks remain.
- 5Pit and dice the nectarines into 1/2-inch pieces. Gently fold most of the diced fruit and all the white chocolate chips into the batter, reserving fruit for the top.
- 6Spread the thick batter evenly into the prepared pan. Press the reserved nectarine pieces into the surface and sprinkle with turbinado sugar for crunch.
- 7Bake until the edges are set and golden, the center is just barely firm, and a toothpick inserted near the middle comes out with a few moist crumbs, 28 to 32 minutes.
- 8Cool completely in the pan on a wire rack at least 1 hour so the bars firm up. Lift out with the parchment and cut into 9 neat squares with a sharp knife.
