  • 2 medium ripe nectarines
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine salt
  • 1/4 tsp ground cardamom
  • 1/3 cup whole milk
  • 1 large egg
  • 2 tbsp melted unsalted butter
  • 1 tsp vanilla extract
  • as needed cooking spray
  • 3/4 cup powdered sugar
  • 1 to 2 tbsp milk or cream for glaze
  • 1 pinch of salt for glaze

Instructions

  1. 1Pit the nectarines and dice into 1/2-inch pieces; you should have about 1 1/4 cups. Pat the pieces dry with a paper towel so the batter does not become watery.
  2. 2In a medium bowl whisk the flour, granulated sugar, baking powder, salt, and cardamom until evenly mixed.
  3. 3In a small bowl whisk the milk, egg, melted butter, and vanilla until smooth. Pour the wet mixture into the dry ingredients and stir just until a thick batter forms with a few small lumps remaining.
  4. 4Gently fold the diced nectarines into the batter until coated and distributed; do not overmix or the fritters will turn tough.
  5. 5Preheat the air fryer to 350°F for 3 minutes. Lightly mist the air-fryer basket with cooking spray.
  6. 6Using a cookie scoop or two spoons, drop eight equal mounds of batter into the basket, leaving space between them so air can circulate. Lightly spray the tops of the fritters.
  7. 7Air-fry for 8 to 10 minutes, flipping halfway with a spatula, until the fritters are deep golden, puffed, and a toothpick inserted in the center comes out clean. Work in batches if your basket is small.
  8. 8While the fritters cook, whisk the powdered sugar with enough milk or cream and salt to make a thick but pourable glaze.
  9. 9Transfer hot fritters to a wire rack set over a tray. Immediately drizzle or spoon the vanilla glaze over the tops so it melts slightly into the cracks.
  10. 10Let the glaze set 2 to 3 minutes, then serve warm. These come together fast for a weeknight dessert or after-school treat while stone fruit is still juicy.
