Ingredients

  • 4 thick sourdough slices
  • 6 oz feta cheese
  • 1/4 cup Greek yogurt
  • 2 medium heirloom tomatoes
  • 4 large eggs
  • 1 1/2 tbsp chili oil or chili crisp oil
  • 1 tsp lemon zest
  • 1 tbsp fresh oregano or thyme
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp honey

Instructions

  1. 1Crumble the feta into a food processor with the Greek yogurt, lemon zest, a drizzle of olive oil, and black pepper; blend until very smooth and fluffy, scraping down sides as needed.
  2. 2Toast the sourdough slices until deeply golden and crisp.
  3. 3Slice the heirloom tomatoes into generous rounds or wedges and season lightly with salt so they shine.
  4. 4Heat a nonstick skillet over medium and cook the eggs soft-scrambled or sunny-side up until whites are opaque and yolks remain jammy, 2 to 4 minutes; season with salt and pepper.
  5. 5Spread a thick layer of whipped feta on each warm toast.
  6. 6Arrange seasoned tomato slices over the feta, slightly overlapping.
  7. 7Top each toast with a soft egg.
  8. 8Drizzle chili oil generously over the eggs and tomatoes, finish with a tiny thread of honey, and scatter fresh oregano.
  9. 9Serve at once so the toast stays crunchy against the creamy feta and runny yolk.
