- 16 fresh basil leaves
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 2 cups baby arugula

Instructions
- 1Preheat a waffle iron to medium-high heat near 375°F and lightly spray both plates so the savory batter releases cleanly.
- 2Whisk flour, cornmeal, baking powder, salt, and pepper in a bowl until evenly mixed.
- 3In a separate bowl, whisk milk, eggs, and melted butter, then pour into the dry ingredients and stir just until combined.
- 4Fold in the minced chives and shredded cheddar so the batter is flecked with green and cheese throughout.
- 5Cook the batter in the waffle iron until deep golden and crisp, about 4 to 5 minutes per waffle; you want sturdy rounds that can hold sandwich fillings.
- 6Transfer waffles to a rack and, if needed, split larger waffles into sandwich-size squares or halves with a knife while still warm.
- 7Set a nonstick skillet over medium heat with a little oil or butter and fry the eggs until the whites are set and edges are lacy, leaving yolks jammy or cooked through to your preference, about 3 to 4 minutes.
