Ingredients

  • 10 large eggs
  • 1 cup whole milk
  • 1/2 cup half-and-half
  • 5 cups day-old crusty bread, cubed
  • 3 medium ripe tomatoes, sliced
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1/2 cup fresh basil leaves, torn
  • 1/2 cup diced green bell pepper
  • 3/4 cup fresh corn kernels
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter for greasing

Instructions

  1. 1Preheat the oven to 375°F and grease a 9x13-inch baking dish with butter so the casserole slides out easily later.
  2. 2Scatter the cubed crusty bread evenly across the bottom of the dish to form a sturdy base that will soak up the egg mixture.
  3. 3Layer half of the tomato slices over the bread, then sprinkle on the diced green bell pepper, fresh corn kernels, and most of the torn basil.
  4. 4In a large bowl, whisk the eggs vigorously until fully blended, then whisk in the milk, half-and-half, garlic powder, salt, and black pepper.
  5. 5Pour the egg mixture slowly over the bread and vegetables, pressing down gently so every piece of bread begins to absorb liquid.
  6. 6Top with the remaining tomato slices arranged in an overlapping pattern, then scatter the mozzarella and Parmesan evenly across the surface.
  7. 7Drizzle the olive oil lightly over the cheese and tomatoes so the top browns beautifully.
  8. 8Bake uncovered for 40 to 45 minutes until the eggs are fully set in the center, the edges are puffed and golden, and the cheese is bubbling.
  9. 9If the top needs more color, switch the oven to broil for the final 1 to 2 minutes, watching closely so it does not burn.
  10. 10Remove from the oven and let the casserole rest for 8 to 10 minutes so it firms enough to slice cleanly.
  11. 11Scatter the remaining fresh basil over the hot casserole just before serving for a bright, fragrant finish.
  12. 12Cut into generous squares and pass the pan the table while still warm.
