Ingredients
- 1 1/2 lb, diced 1/2-inch Yukon Gold potatoes
- 2 cups fresh sweet corn kernels
- 1 small, diced red onion
- 1, seeded and minced jalapeño
- 4 large eggs
- 3 tbsp olive oil
- 1/2 cup, crumbled cotija cheese
- 1/4 cup, chopped fresh cilantro
- 1, cut into wedges lime
- 2 tbsp mayonnaise
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Instructions
- 1Preheat a large 12-inch cast-iron skillet over medium-high heat for 2 minutes. Add two tablespoons of olive oil, then the diced potatoes in a single layer. Season with half the salt and black pepper and cook undisturbed 4 minutes to develop a deep golden crust.
- 2Stir the potatoes and continue cooking, flipping every few minutes, until they are crispy outside and tender inside, 12 to 14 minutes total. If the pan looks dry, add a splash more oil.
- 3Push the potatoes to the edges. Add the remaining oil to the center along with the red onion, jalapeño, and sweet corn kernels. Sauté until the corn chars in spots and the onion softens, 4 to 5 minutes.
- 4Sprinkle the chili powder, garlic powder, and smoked paprika over the entire hash and toss everything together so the spices toast and coat the vegetables. Taste and adjust salt.
- 5Create four wells in the hash with the back of a spoon. Crack an egg into each well. Cover the skillet and cook until the whites are opaque and set while the yolks stay sunny and runny, 3 to 5 minutes depending on preferred doneness.
- 6Remove from heat. Stir the mayonnaise with a squeeze of lime juice and chili powder to make a quick crema, then drizzle it lightly over the hash.
- 7Scatter crumbled cotija and chopped cilantro generously across the top. Serve straight from the skillet with extra lime wedges for squeezing at the table.
- 8The combination of crispy potatoes, sweet charred corn, and creamy cotija delivers classic street-corn flavor in a hearty one-pan breakfast that feels both seasonal and substantial.
