- 2 slices thick-sliced sourdough bread
- 4 large eggs
- 3 tbsp basil pesto
- 1/2 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes
Instructions
- 1Set a large nonstick skillet over medium heat and let it warm for about 1 minute while you prep the bread and tomatoes.
- 2Toast the sourdough slices in a toaster or dry skillet until deep golden and crisp on both sides, then transfer to plates.
