- 1 cup old-fashioned rolled oats
- 2 cups low-sodium chicken broth
- 4 large eggs
- 0.5 cup grated Parmesan cheese
- 3 thinly sliced scallions
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
- 1 tsp olive oil or butter for eggs
Instructions
- 1In a medium saucepan, bring the chicken broth to a gentle boil over medium-high heat. Stir in the oats and salt.
- 2Reduce heat to medium-low and simmer the oats, stirring often, for 5 to 7 minutes until thick, creamy, and most of the liquid is absorbed.
- 3While the oats cook, heat a nonstick skillet over medium heat with a light film of oil or butter. Crack in the eggs and cook sunny-side or over-easy until whites are set and yolks remain runny, about 3 to 4 minutes.
- 4Season the eggs lightly with salt and pepper. Remove from heat so the yolks stay soft.
- 5Stir most of the grated Parmesan into the finished oatmeal until melted and savory. Taste and adjust seasoning.
- 6Divide the hot oatmeal between two bowls. Nestle two soft eggs on top of each bowl.
- 7Scatter the remaining Parmesan and the sliced scallions over the eggs and oats. Crack extra black pepper on top.
